In many countries in Western Europe, pasta is served as a main dish, starter, soup or even dessert in daily meals. The high quantity of starch makes one feel full for a long time, and no meal can seem as satisfying as a properly cooked Italian supper. But where can you find authentic Italian cuisine in Ho Chi Minh City, made by a real chef that understands that alfredo sauce is not made with condensed milk?
There are two basic kinds of pasta: dried and fresh. Fresh pasta can be kept for a few days under refrigeration. Dried pasta is more popular because it can be stored for up to two years. However, the best pasta and sauces have to be made the Italian way, from scratch that morning. The sauce must simmer for several hours fusing all the flavors of Italian olive oils, fresh garlic, onion and spices. Fresh pasta can be combined with many sauces or fillings such as tomatoes, mushrooms, vegetables, pork, beef and seafood.
Vietnam has the unique opportunity to create authentic Italian dishes easily due to the abundance and availability of fresh spices and vegetables. Fresh seafood, garlic and onion are staples of Vietnamese dishes, so Italian chefs should be able to duplicate delicious Italian sauces and classics such as lasagna, ravioli and manicotti.
